BANANA BREAD BISCUITS

Soft banana bread cookies with delicately crunchy, cinnamon sugar coating. Adapted from Donna Hay's Life in Balance ©2016

Ingredients

  • 3 Large Extra Ripe Bananas
  • 2 cups Almond Flour
  • cup Maple Syrup
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • ¼ cup Sugar

Instructions

  • Preheat oven to 325°
  • In a large bowl, mash the bananas, then mix in almond flour, maple, vanilla and a pinch of the cinnamon until mixed thoroughly.
  • In a small bowl, mix the sugar + 1 tsp cinnamon.
  • Using a small cookie scoop, form small balls of dough + lightly coat in the cinnamon sugar mixture. Place on parchment lined tray 2" apart. Slightly flatten the balls with spatula.
  • Bake 30 - 40 minutes, or until golden and lightly crisp around edges.
