In a large bowl, mash the bananas, then mix in almond flour, maple, vanilla and a pinch of the cinnamon until mixed thoroughly.
In a small bowl, mix the sugar + 1 tsp cinnamon.
Using a small cookie scoop, form small balls of dough + lightly coat in the cinnamon sugar mixture. Place on parchment lined tray 2" apart. Slightly flatten the balls with spatula.
Bake 30 - 40 minutes, or until golden and lightly crisp around edges.
