Preheat oven to 350°. Line loaf pan with parchment paper.
Whisk together in small bowl: ground flax + water. Set aside for 3 min to allow thickening.
Whisk together in medium bowl: flour, cinnamon, baking soda + powder, salt.
Whisk together in large bowl: oil, both sugars, vanilla, flax mixture and bananas.
Fold flour mixture into wet mixture until just combined.
Pour into loaf pan + let rest 10 minutes prior to baking. Bake 55 - 60 minutes.
