BRIOCHE FRENCH TOAST

Great weekend breakfast that is fairly quick and absolutely delicious. Adapted from Thug Kitchen cookbook ©2014

Ingredients

  • 1/2 Loaf Vegan Brioche Bread, Sliced
  • Tsp Ground Flax
  • 2 Tbsp Gluten-Free Flour
  • 1 Cup Soy Milk, Nut milks work, also
  • Tbsp Nutritional Yeast
  • 1 Tsp Vanilla Extract
  • 2 Tsp Raw Sugar
  • ½ Tsp Cinnamon
  • Cooking Spray or Plant Blutter
  • Berries, Maple Syrup

Instructions

  • In a wide bowl, mix flour + flax with fork. Whisk milk in gradually. Rest mixture 15 minutes.
  • Whisk mixture once more, then whisk in nutritional yeast, vanilla, sugar + cinnamon.
  • Heat a griddle or skillet over medium and add butter (or spray), letting it melt completely and coat the pan.
  • Soak brioche slices on each side, then place in warmed pan. Cook until golden brown, about 1 - 2 minutes per side.
