SMOKED ALMOND BROCCOLI SALAD

BROCCOLI, SMOKED ALMONDS, CRANBERRIES, RED ONION SAUTÉ, MAPLE DIJON DRESSING. Adapted from our long time favorite, Cookie + Kate.

Ingredients

Broccoli Salad

  • 2 crowns Broccoli
  • ¼ cup Dried Cranberries
  • ¼ cup Smoked Almonds, chopped
  • ½ Red Onion, finely chopped

Maple Dijon Dressing

  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Maple Syrup
  • 2 tsp Dijon
  • 1.5 tbsp Apple Cider Vinegar
  • 2 tbsp Vegenaise
  • 1 Garlic Clove, minced
  • Salt, to taste
  • Adapted from a legacy in food blogs, "cookie + kate" provide the inspiration for this truly addicting weekday salad.

Instructions

Dressing

  • Place all ingredients in a small bowl, and whisk until smooth. Set aside.

Broccoli Salad

  • In a medium skillet, heat a little bit of oil over medium-high heat. Add chopped onions to skillet and sauté until golden and translucent. 8 - 10 min. Set aside.
  • Cut broccoli crowns into small florets. Stems may also be finely chopped and added, if desired. Place broccoli in a medium or large bowl.
  • Add sautéed onions, dried cranberries and smoked almonds to broccoli bowl. Mix thoroughly.
  • Add half of the dressing to the bowl and mix thoroughly. If the broccoli is still a bit dry, continue to incorporate more of the dressing until the salad reaches desired consistency.
