SWEET GREENS SALAD + BALSAMIC AND ALMOND RICOTTA

Ingredients

  • 2 Peaches, pitted and sliced
  • 1 cup Grape Tomatoes, Halved
  • 2 cups Spinach + Arugula Mixture
  • 1 Avocado, Diced
  • 1/2 cup Fresh Herbs: Mint, Dill, Parsely
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • Kite Hill Almond Ricotta
  • Salt + Freshly Ground Pepper

Instructions

  • In a large bowl, whisk olive oil and vinegar. Swirl the mixture in the bowl so it coats the sides.
  • Add spinach, peaches, tomatoes, salt & pepper to bowl and toss.
  • Top with avocado + basil strips.
