Adapted from Turshen & Paltrow's "It's All Good". Toasted corn, fresh sage and caramelized onions perfectly balances sweet, smokey and savory in one bite.
Heat oil in a large pan over medium. Add onions with a pinch of salt, and saute until just starting to brown, 10 - 15 min. If they start to dry out before browning, add a splash of water.
Add corn kernals, sage and a pinch of salt + pepper. Thoroughly mix with onions, and cook until corn just starts to brown - about 5 minutes or so.
